Ziti and Ham Salad with Mustard Dressing


This is a hearty salad for those who like it hot, hot!

Makes 8 servings.

1 package (1 pound) ziti macaroni
1 tablespoon vegetable oil
1 canned (1 pound) ham
or: 1 1/2 cans (12 ounce size) luncheon meat
1 can (about 4 ounces) sliced mushrooms, drained
2 cups diced green pepper
1 large red onion, diced (1 cup)
1/3 cup cider vinegar
1 tablespoon Worcestershire sauce
2 to 3 teaspoons dry mustard
1 teaspoon salt
8 drops liquid red pepper seasoning
1 egg
2/3 cup peanut oil
2 tablespoons chopped fresh parsley
1/4 cup grated Parmesan cheese
Salad greens
1 can (14 1/2 ounces) sliced tomatoes, chilled and drained

Procedure:
1. Cook ziti in boiling water, following label directions; drain; rinse; drain well. Place in bowl; toss with 1 tablespoon oil to prevent sticking.
2. Cut ham into strips about 2x1/4 inches long; add with mushrooms, pepper and onion to ziti.
3. To make Mustard dressing: combine vinegar, Worcestershire, mustard, salt, red pepper seasoning and egg in container of electric blender; cover; whirl at high speed for 15 seconds. Turn blender to low; add oil; in a thin stream; continue blending 1 minute. Add parsley and cheese; pour over ziti mixture in a bowl. Toss to mix well; chill several hours.
4. To serve: Line a large salad bowl with crisp greens; spoon salad into bowl. Garnish with tomatoes.
