½ cup heavy cream
2 tablespoons sugar
½ teaspoon ground ginger
1 pound cream-style cottage cheese
½ teaspoon grated lemon rind
Procedure:
Beat cream with sugar and ginger until stiff in a small bowl; fold into cottage cheese and lemon rind in a medium-size bowl. Chill until serving time.
