Blue Cheese French Dressing



Try this on any green salad or pour over tomatoes.

Makes 1 ¼ cups.

2/3 cup vegetable oil or olive oil
½ cup cider or wine vinegar
½ teaspoon sugar
1 teaspoon salt
¼ teaspoon pepper
1/3 cup coarsely crumbled blue cheese (about 1 ½ ounces)
1 clove garlic, peeled and minced

Procedure:
Combine all ingredients in a screw-top jar with a tight-fitting lid. Shake well to blend; chill.

Variation:
Parmesan Dressing:
Substitute ½ teaspoon leaf basil, crumbled; ½ teaspoon leaf tarragon, crumbled; and 2 tablespoons grated Parmesan for the blue cheese and garlic in recipe above. Makes 1 cup.
