Lemon Beet Mold


The parsley dressing adds a distinctive flavor to this favorite.

Makes 6 servings.

1 package (3 ounces) lemon-flavor gelatin
1 cup boiling water
1 cup cold water
2 tablespoons lemon juice
1 can (1 pound) diced beets, drained
1/4 cup chopped green onions
Parsley Dressing (recipe follows)

Procedure:
1. Dissolve gelatin in boiling water in a medium-size bowl; stir in cold water and lemon juice. Chill 50 minutes, or just until as thick as unbeaten egg white.
2. Fold in beets and onions; spoon into a 4-cup mold. Chill several hours, or until firm.
3. Unmold onto a serving plate; garnish with romaine, if you wish and serve with Parsley Dressing.

Parsley Dressing:
Blend 1/2 cup mayonnaise or salad dressing with 2 tablespoons cream and 2 tablespoons chopped parsley in a small bowl.
