Avocado Chip Cream


The secret lies in blending half the avocado smooth.

Makes about 2 1/2 cups.

1 large ripe avocado
1 package (8 ounces) cream cheese
1/2 cup dairy sour cream
2 tablespoons lemon juice
2 tablespoons honey

Procedure:
1. Halve avocado,then peel and pit. Cut one half into small chunks and place in an electric blender container. Slice in cream cheese, then add sour cream, lemon juice and honey; cover. Beat at high speed 1minute,or until smooth.( If you dont have a blender, mash avocado in a medium-size bowl, then beat in remaining ingredients until smooth.)
2. Cut remaining half of avocado into 1/4 inch cubes; fold into dressing; cover; chill.
