Supper Salad




Main dish salad with a meat and cheese flavor.

Makes 6 servings.

2 packages (10 pounds each) frozen lima beans
1 medium-size onion, chopped(1/2 cup)
2 stalks celery, sliced
6 slices bacon, cut in pieces
1/4 cup bacon drippings
1/4 cup wine vinegar or cider vinegar
1/4 teaspoon pepper
1/2 pound salami, cut into thin strips
1 package (8 ounces) sliced Swiss or American cheese, cut into thin strips
1/2 cup halved pitted ripe olives
3 medium-size carrots,pared and coarsely grated
3 slices sweet onion, separated into rings
Few leaves of romaine
1/2 teaspoon salt
Dash of paprika
Vegetable oil and cider vinegar

Procedure:
1. Cook frozen lima beans, following label directions; drain. Place in salad bowl; add onion and celery.
2. Saute bacon until crisp in medium-size frying pan; drain on paper toweling. Measure 1/4 cup drippings; mix with 1/4 cup vinegar and pepper;pour over lima beans in bowl; add bacon; toss lightly.
3. Arrange salami, cheese, olives and carrots in separate piles on top; place onion rings in middle; edge salad bowl with romaine.
4. Sprinkle salt and paprika over. Toss lightly, adding a little oil and vinegar, if needed.
