Shimmering Shrimp Aspic
Any hostess will win raves with this aspic.
Makes 6 servings.
3 cans (13 3/4 ounces each) chicken broth
3 envelopes unflavored gelatin
2 packages (1 pound each) frozen deveined shelled shrimp
Watercress
Pitted ripe olives, slivered
1 cup mayonnaise or salad dressing
2 tablespoons lemon juice
1 teaspoon grated onion
3 hard-cooked eggs, shelled and coarsely chopped
1/2 cup diced celery
Procedure:
1. Skim fat from chicken broth.
2. Soften gelatin in chicken broth about 5 minutes in a large saucepan. Heat, stirring constantly, until gelatin dissolves. Pour into a medium-size bowl; cool.
3. Cook shrimp, following label directions; drain; cool. Set aside 6 shrimps for decoration; cut remainder into bite-size pieces; place in a large bowl; cover; chill.
4. Pour 1/2 cup of the cooled gelatin mixture into an 8x8x2 pan; chill. (Use for platter decoration in step 10).
5. Pour 1/2 cup of the remaining gelatin mixture into a 9x5x3 loaf pan. Chill until sticky-firm.
6. Arrange reserved whole shrimp, with watercress sprigs and olives on the aspic in loaf pan to make a pretty design.Spoon1/2 cup of the remaining gelatin mixture carefully over the design, a little at a time, chilling briefly after each addition.Then chill completed design layer till it is sticky-firm.
7. Stir mayonnaise or salad dressing and lemon juice into remaining gelatin mixture.Place bowl in a pan of ice and water to speed setting. Chill, stirring several times, until as thick as unbeaten egg white.
8. Fold in onion, chopped eggs, shrimp and celery.Pour carefully over sticky-firm aspic layer in loaf pan. Chill until firm, about 4 hours.(overnight is best).
9. Just before serving, loosen salad around edges with a knife; dip pan very quickly in and out of hot water.Cover pan with serving plate; turn upside down; gently lift off pan.
10. Cut small triangles from firm aspic in square pan. Arrange as decorative border around salad. Chill until serving time.
11. To serve, cut salad into 6 slices; garnish each serving with some of the aspic triangles.
