Perfection Cheese Loaf


A vegetable salad with a cottage cheese topping.

Makes 8 servings.

2 package2 (3 ounces each) lime-flavor gelatin
2 cups hot water
1 3/4 cups cold water
4 tablespoons lemon juice
1/2 cup finely shredded cabbage
1/2 cup chopped celery
1/2 cup shredded carrots
1/4 cup thinly sliced radishes
2 cups (2 eight-ounce containers) cottage cheese
1 teaspoon grated onion
1/4 teaspoon salt

Procedure:
1.Dissolve gelatin in hot water; stir in cold water and lemon juice; divide in half; chill one half until syrupy; keep other half at room temperature for step 3.
2. Fold vegetables into syrupy gelatin; pour into 8-cup mold; chill until firm.
3. Chill second half of gelatin until syrupy; fold in cottage cheese combined with grated onion and salt; spoon over chilled layer in mold; chill until firm.
4. Unmold onto platter; garnish with radish roses and watercress.
