Luncheon Salad
There's more than enough salad to satisfy a luncheon appetite.
Makes 6 to 8 servings.
2 packages lemon-flavor gelatin
2 cups hot water
1 1/2 cup apple juice
2 tablespoons lemon juice
2 teaspoons prepared horseradish
1/4 teaspoon salt
1/2 small cucumber, unpared
1/4 cup diced celery
1/4 cup thinly sliced radishes
1 1/2 cups diced cooked ham
Procedure:
1. Dissolve gelatin in hot water in medium-size bowl; stir in apple juice, lemon juice, horseradish and salt; chill until slightly thickened.
2. Cut cucumber lengthwise into quarters; remove seeds; cut crosswise into thin slices (makes about 1/2 cup).
3. Combine cucumber, celery, radishes and ham in medium-size bowl; fold into thickened gelatin.
4. Pour into 8-cup mold; chill 4 hours, or until firm.
5. Unmold onto serving plate; garnish with salad greens and radish roses, if desired; serve with your favorite salad dressing.
