Karrysalat
Curried herring and macaroni salad that hails from Norway.
Makes 6 servings.
1 package (8 ounces) small macaroni shells
1 jar (12 ounces) herring party snacks in wine sauce
1 large Delicious apple, quartered, cored and diced (2 cups)
1 cup diced unpeeled cucumber
1 cup sliced red onion
3/4 cup mayonnaise or salad dressing
3/4 cup dairy sour cream
1 1/2 teaspoons curry powder
Iceberg lettuce
Procedure:
1. Cook macaroni following label directions; drain.
2. Drain wine sauce from herring.pour over hot macaroni shells bowl; toss to coat.
3. Cut large herring pieces in half; add to bowl with apple,cucumber and onion.
4. Combine mayonnaise, sour cream and curry powder in a small bowl.Add to bowl; mix gently; cover.Refrigerate for several hours until the flavors are blended.
5. Just before serving line a salad bowl with lettuce; spoon salad on top.
