Classic French Dressing
This is one of the most popular salad dressings and it couldn’t be easier to make.
Procedure:
Combine 2/3 cup vegetable or olive oil, ½ cup cider or wine vinegar, 1 teaspoon of salt, ½ teaspoon sugar and ¼ teaspoon pepper in a jar with a tight-fitting lid. Shake well to blend; chill. Great for green salads. Makes 1 cup.
Variations:
Herbed French Dressing:
Combine 1 cup Classic French Dressing with 2 tablespoons grated Parmesan Cheese, 1/2 teaspoon crumbled leaf basil and 1/2 teaspoon crumbled leaf tarragon in jar with tight-fitting lid.Shake well to blend; chill. Refreshing for crispy vegetables salads.Makes 1 cup.
Tomato French Dressing:
Combine 1 cup Classic French Dressing with 1 can condensed tomato soup, 1 tablespoon of prepared mustard, 1 tablespoon minced onion and 1 halved garlic clove in a large jar with tight-fitting lid. Shake well to blend and chill.Delightful on crisp, chilled lettuce wedges. Makes 1 1/3 cups.
Blue Cheese French Dressing:
Combine 1 cup of the Classic French Dressing with 1/3 cup of coarsely crumbled blue cheese and 1 clove of minced garlic in a jar with a tight-fitting lid. Shake it well to blend the flavors; chill. Zesty on ripe red tomatoes.
Tangy Fresh Dressing:
Combine 1 cup Classic French Dressing with 1 teaspoon Worcestershire sauce, 1 teaspoon of prepared mustard and 1 halved garlic clove in a jar with a tight-fitting lid. Shake it well to blend; chill.Great for marinating cooked asparagus, green beans or sliced yellow squash.Makes 1 cup.
